A neighbor of ours gave Gregg a bag of ramps yesterday. I was beyond excited, as I have been unable to locate any more. Since Ramp season came on early this year, it leaves us early. And Ramp Season will last anywhere from 3-6 weeks, depending. The leafs were already deteriorated, so we had just the bulbs, all 2 lbs of them!! Some of them were the size of a fingerling potato! We decided to use a small portion for one last RAMP HURRAH, and we will plant the rest to expand our Ramp Patches.
We decided to make Rampie Taters, using non other than fingerling potatoes and Ramp Burgers. I took it to the next level! I minced about 2-3 tablespoons of raw ramps and incorporated them into the burger mixture (equal portions of 80/20 beef and ground pork) along with a healthy dose of fresh ground peppercorns. Gregg grilled them to absolute perfection, topped with a combo of black pepper cheddar and jalapeno cheddar. I slathered on a thick layer of my Ramp & Smoked Almond Pesto on the oh so fresh from the bakery bun, I also added some of our just harvested buttercrisp lettuce and our arugula! WOW! I would have to say that this has to be one of the best, if not the best burger I ever had!
