Simply put, Shrimp N Cheddar Grits N Ramps!!
Now here is what I like to call Tres Ramps!
1 - Cut a deep slit in thick cut pork chops, marinate in mojo all day. Grill to almost absolute perfection, now I said almost ..... now pull off the grill and stuff with a mixture of caramelized ramps, chopped heirloom maters, goat cheese and a bit of sea salt and fresh cracked peppercorns. Place in a heated cast iron pan and put in 350° oven for 5 m...in and turn off oven, wait 5 more minutes. Finish with a Appalachian Ramp Chimichurri sauce!
2 - Gregg collected some micro greens from the baby lettuce and beet plants and lightly tossed with a Ramp infused Italian Dressing!
3 - Buttermilk Cornbread (Joe Trapp's mix) with the Appalachian Ramp Chimichurri drizzled on top!


Here we have a hot juicy Rib Eye grilled perfectly as to simply appear to melt in your mouth ........ the Appalachian Ramp Chimichurri sauce adds the perfect seasonings to bring out the full bodied grilled flavors of the steak. The corn is from Christopher Farms and was just incredible with just a bit of butter and salt. The yukon gold taters were roasted til crispy and tossed with sea salt, black peppercorns and a splash of the chimichurri sauce.
I chopped a bunch of ramp leafs and mixed them into the chopped beef mixture til incorporated all the way thru. Gregg grilled to medium and topped with your choice of Sharp White Vermont Cheddar or Cracked Peppercorn Cheddar, I had both! I chose to opt out of the bun and serve on a bed of our Flashy Troutback lettuce and Agulula with Ramp infused dressing with a few dollops of srhiracha and fresh ramps! A side of our 2011 dill pickles and fresh corn on the cob with Appalachian Ramp Chimichurri!!!

Since my buddy JPO placed a bouquet of beautiful Ramps on my desk at work, I had lots more leafs, and what to dew with the leafs?? Why make Ramp Pesto of course!!! I thought about it and decided to make Smoked Almond and Asaigo Pesto and Pecan Parmesan Pesto!
