We had this past week and weekend to ourselves, as both boys
went to TN with Gramma to stay with their TN Family. It was the first time
we have had the house to ourselves in since like forever.
We decided to go camping, just the two of us, like old times. We got a cabin
at Mile High and headed out Friday about 12:30. Thirty Three minutes and 22 miles
later, we arrived. It was also 15 wonderful degrees cooler.
We bought our corn hole game and played 6 games, we each won 3. Two of them
were actually a tie and we had to have a sudden death to declare a winner.
We bought some deer meat that Norman had given us and we made swiss shroom
burgers and marinated and grilled some squash and zuchinis from our garden.
even made a little one for Angel!!
We took a walk after dinner and found an empty site that had a better view of the sunset.
Saturday began thick with fog and as the sun
began to rise to cast its rays through the fog, I snapped a few photos.
Later that morning, we headed out about 10 am, Me for a jog, and Gregg for a bike ride.
We did a total of 6 miles (my furthest distance yet, by .2 miles). We headed out from our campsite, and ran to the main road and turned left. Now this road, due to the crazy government sequester, has been closed, so there was no traffic - just the mountain views and a cool breeze. The first 3 miles was pretty much down hill, so needless to say, the 3 miles back was uphill. And I found out that the elevation change was 900 feet in that 3 mile span ........ no wonder we were whooped when we returned, lol! We treated ourselves to huevos rancheros using our eggs and, like in the earlier days, we did a couple shots of tequila with brunch. We pulled out our limited edition Harley Davidson shot glasses we bought 20 years ago to commemorate the occasion of camping, just the two of us.
We took Angel with us on our next hike and we were walking and all of a sudden, there is was! A female elk!! They say that an elk sighting is quite common there now a days. We stood there for about 15 minutes just looking at it looking at us. Such large creatures! She even started to take a few steps in our direction. VERY cool animals!
since we had all the time in the world to create dinner,
we decided to prepare a dish that would take some time for us to make together.
and we chose Eggplant Parmesan!
slice 2 eggplants very VERY thin, about 80 slices all together
dip and coat with some of our fresh eggs
sautee in extra virgin olive oil
chop fresh mozzarella and parmesan cheeses
layer one, eggplant on top of our homemade sauce using our
canned maters from 2009 and 2011 and our 2013 Early Red Italian garlic
sprinkle on the cheeses .......
add the sauce and repeated til all eggplant slices were used,
we ended up with six layers of l♥ve!
cook in the dutch oven at 325 degrees til bubbly .....
and now it is awl bubbly!!!
The whole process of making this devine dish took so long that we decided to
enjoy the abience of a candle lit dinner.
and paired it perfectly with Dreaming Tree Crush vino
Sunday morning started with clouds covering the mountain ...
we rose quite early to head out about 7 am on a hike and to hopefully have another elk siting.
We hiked about 3 1/2 miles and found some cool things to shoot.
a ground bee, they have quite a loud buzz!
