Here we have Parmesan Frico
atop a fresh fried austrolorp egg ....
Frico is beyond easy to make!! and adds a perfect,
almost bacon~y smoky flavor when perfectly prepared.
Awl you have to do is fry it.
I use a well seasoned cast iron pan.
I am sure one of those fancy non~sticks will work fine.
Get your pan hot over med~hi .....
shave/grate your parm onto the pan
(with a touch of olive oil, or you can use spray oil).
Let it go til it starts to turn brown
(stoves will vary in time) and remove pan from the heat.
wait long enough to cool slightly and lift with a spatula...
